Depending on which handset model you have, different software is suitable to send SMS via bluetooth. I used to have a SonyEricsson K700i, which went very well with BluePhoneElite (http://www.reelintelligence.com/BluePhoneElite/). Check, if your phone is supported (http://www.reelintelligence.com/BluePhoneElite/compatibility.shtml).
My new Nokia N80 is not supported by BluePhoneElite nor by the Apple Address Book. So I installed Remote GSM (http://www.traud.de/gsm/remote/). This is much less sophisticated than BluePhoneElite but it works to send SMS via bluetooth. Make sure to have "Remote Sim" settings set to "On" on your phone.
